Why These Cookies Are So Amazing

These cookies combine some seriously delicious flavors and textures in every bite.

You get:

  • Deep chocolate flavor from cocoa powder and chocolate squares
  • Creamy pistachio filling tucked into the center
  • Crispy roasted kataifi on top for a crunchy finish
  • A bakery-style cookie that feels a little extra special

They look impressive, but they come together quickly, making them perfect when you want a dessert that feels thoughtful without spending hours in the kitchen.

Ingredients You’ll Need

  • All-purpose flour – Forms the base of the cookie dough.
  • Cocoa powder – Adds rich chocolate flavor.
  • Baking powder – Helps the cookies rise slightly and stay soft.
  • Unsalted butter (softened) – Creates a tender cookie texture.
  • Granulated sugar – Adds sweetness and helps with structure.
  • Brown sugar – Adds moisture and a subtle caramel flavor.
  • Egg yolk – Gives the dough richness and helps bind everything together.
  • Pistachio chocolate squares – Adds melty chocolate flavor. Pistachio chocolate works especially well here.
  • Roasted kataifi – A shredded pastry that adds a crispy, bakery-style topping.
  • Pistachio cream – The creamy center that makes these cookies extra indulgent.
  • Heart sprinkles (optional)

How to Make Dubai Chocolate Cookies

These cookies are simple, fun, and come together quickly.

Step 1: Make the Cookie Dough

In a small bowl, whisk together the flour, cocoa powder, baking powder, granulated sugar, and brown sugar.

In another bowl, cream together the softened butter and egg yolk until smooth and well combined.

Gradually add the dry ingredients to the wet ingredients and mix until a soft cookie dough forms.

Step 2: Assemble the Cookies

Divide the dough into two equal portions and shape them into round cookies.

Make a small indentation in the center of each cookie.

Spoon a dollop of pistachio cream into the center. Then press a small amount of roasted kataifi on top of the pistachio cream. Add the chocolate pieces and chocolate shavings on top.

If desired, sprinkle with sprinkles for a festive look.

Step 3: Bake the Cookies

Place the cookies on a parchment-lined baking sheet.

Bake at 350°F for 10–12 minutes, until the edges are set but the centers are still soft. The cookies will continue to firm up slightly as they cool.

Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Serve warm or at room temperature.

Tips & Variations

  • Use high-quality chocolate for the best flavor.
  • If you can’t find pistachio chocolate, regular dark chocolate or milk chocolate works well too.
  • Lightly toast the kataifi before using it for extra crunch and flavor.
  • Add a drizzle of melted chocolate over the top after baking for a bakery-style finish.
  • For a bigger batch, simply double or triple the ingredients.

Perfect For:

  • Date night treats
  • Small-batch baking
  • Dessert for two
  • Chocolate and pistachio lovers
