Ingredients

  • 1 box angel food cake mix heat-treated — instructions below
  • 2 8 oz blocks cream cheese, softened
  • 1 tsp vanilla extract optional
  • Sprinkles for rolling rainbow, pastel, or seasonal — your choice!

Instructions

Make the Dough

  • In a large mixing bowl, combine the heat-treated cake mix, softened cream cheese, and vanilla extract (if using). Mix until smooth and well combined. The mixture will be thick and slightly sticky.

Chill

  • Cover the bowl and refrigerate for at least 1 hour — this makes it easier to roll.

Roll into Bites

  • Once chilled, use a small cookie scoop or spoon to roll the mixture into 1-inch balls.

Add the Sprinkles

  • Pour your sprinkles into a shallow bowl and gently roll each cheesecake bite until fully coated. Press lightly to help them stick.

Chill or Serve

  • Store in the fridge until ready to serve. These are best enjoyed cold and will keep well in an airtight container for up to 5 days.

Notes

How to Heat-Treat Cake Mix (Important!)
Since the cake mix isn’t being baked, it’s important to heat-treat it first to kill any potential bacteria in the raw flour:
Pour the dry cake mix into a large microwave-safe bowl.
Microwave in 30-second intervals, stirring between each, until the mix reaches 165°F throughout (usually about 1½–2 minutes total).
Let it cool completely before using.
