Place Oreos in food processor and grind to dust.
Once Oreos are finely ground, mix with softened cream cheese until completely combined.
Roll into balls and place on parchment lined cookie sheet, freeze overnight.
Once frozen, place dark cocoa in microwave safe bowl and melt in 30 second increments, stirring after each.
Completely cover balls in chocolate, place back on parchment lined sheet. Let dry.
Once dry, melt the red and green chocolate in separate bowls in 30 second increments, stirring after each.
Spoon melted chocolate into pastry bags and cut off small/medium tip and drizzle over Oreo balls.
Sprinkle with Christmas sprinkles while still wet. Let dry and serve!
