For the Cookies:

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

For the Cinnamon Sugar Coating:

  • 1/4 cup brown sugar
  • 2 teaspoons ground cinnamon
  • ½ cup granulated sugar

Instructions

  • Preheat the Oven : Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Make the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the egg and vanilla extract, mixing until well combined.
  • Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  • Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Prepare Cinnamon Sugar: In a small bowl, mix together the granulated sugar, brown sugar and ground cinnamon.
  • Shape the Cookies: Roll the dough into small balls (about 1 inch in diameter, use ice scooper if you prefer) and then roll each ball in the cinnamon sugar mixture, ensuring they are well coated.
  • Bake: Place the coated dough balls on the prepared baking sheet about 2 inches apart. Bake in the preheated oven for about 10-12 minutes or until the edges are slightly golden.
  • Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Enjoy: Serve the cookies warm or store them in an airtight container for later.
