Measuring cups and spoons, small bowl, 9x13 inch baking dish, large bowl and electric mixer or stand mixer, silicone spoon.
- 2 cups graham cracker crumbs
- 1 tbsp granulated sugar
- ½ cup 1 stick unsalted butter, melted
- 16 oz cream cheese softened
- 1 ½ cups powdered sugar
- 16 oz whipped topping thawed
- 3.4 oz box instant vanilla pudding
- 12 oz can evaporated milk
- 15 oz can pure pumpkin
- 1 ½ tsp pumpkin spice
- ¼ cup pecans chopped
Mix together graham cracker crumbs, sugar and melted butter in a small bowl. Pour into a 9x13 inch baking dish and spread out, then flatten to form the crust.
Beat the cream cheese and powdered sugar on high until combined. Then beat in 1 1/2 cups of whipped topping on medium speed.
Spread the cheesecake mixture on top of the crust.
Refrigerate while you prepare the next pumpkin layer.
Beat the vanilla pudding and evaporated milk
Then beat in the pumpkin and pumpkin pie spice.
Fold in 1/2 cup whipped topping.
Spread over the cheesecake layer.
Spread the remaining 2 cups on whipped topping on top of the pumpkin layer.
Top with pecans.
Refrigerate for 2 hours, or until ready to serve.
