Equipment

  • Measuring cups and spoons, small bowl, 9x13 inch baking dish, large bowl and electric mixer or stand mixer, silicone spoon.

Ingredients

  • 2 cups graham cracker crumbs
  • 1 tbsp granulated sugar
  • ½ cup 1 stick unsalted butter, melted
  • 16 oz cream cheese softened
  • 1 ½ cups powdered sugar
  • 16 oz whipped topping thawed
  • 3.4 oz box instant vanilla pudding
  • 12 oz can evaporated milk
  • 15 oz can pure pumpkin
  • 1 ½ tsp pumpkin spice
  • ¼ cup pecans chopped

Instructions

  • Mix together graham cracker crumbs, sugar and melted butter in a small bowl. Pour into a 9x13 inch baking dish and spread out, then flatten to form the crust.
  • Beat the cream cheese and powdered sugar on high until combined. Then beat in 1 1/2 cups of whipped topping on medium speed.
  • Spread the cheesecake mixture on top of the crust.
  • Refrigerate while you prepare the next pumpkin layer.
  • Beat the vanilla pudding and evaporated milk
  • Then beat in the pumpkin and pumpkin pie spice.
  • Fold in 1/2 cup whipped topping.
  • Spread over the cheesecake layer.
  • Spread the remaining 2 cups on whipped topping on top of the pumpkin layer.
  • Top with pecans.
  • Refrigerate for 2 hours, or until ready to serve.
