How to Make Loaded Black Bean Dip

In a medium saucepan, heat olive oil over medium. Add the black beans, tomato paste, smoked paprika, cumin, and oregano. Stir and cook for 8–10 minutes, until warmed through and fragrant.

Step 2: Mash the mixture

Remove from heat and mash the beans using a potato masher for a chunky texture. For a smoother dip, blend in a food processor or blender.

Step 3: Load it up!

Spoon the warm black bean base onto a serving plate. Top with corn, chopped tomato, red onion, a few dollops of sour cream, and sprinkle with parsley.

Ingredients

  • 1 T. Extra virgin olive oil
  • 2 14- oz. Cans black beans rinsed and drained
  • 1 T. Tomato paste
  • 1 t. Smoked paprika
  • 2 t. Ground cumin
  • 1/2 t. Dried oregano
  • 1/2 c. Frozen corn defrosted
  • 1 Tomato finely chopped
  • 1/2 Red onion finely diced
  • 1/2 c. Sour cream
  • 1/2 c. Fresh parsley chopped
  • Tortilla chips for serving

Instructions

  • In a medium pot, add olive oil, black beans, tomato paste, smoked paprika, cumin, and oregano.
  • Cook over medium heat, stirring occasionally, until the beans are warmed through, and the spices are very fragrant, 8-10 minutes.
  • Remove from heat and mash using a potato masher. If you prefer a smoother texture, you can also blend the dip using a blender.
  • Transfer the dip to a serving plate and top with corn, tomato, red onion, sour cream, and parsley.
  • Serve with tortilla chips for dipping.
  • Enjoy!
